Jerusalem artichoke (Helianthus tuberosus) contains inulin, vitamins B1, B3, B4, B5, E, C, carotene, dietary fibre, proteins, unsaturated fatty acids, succinic, malic, fumaric, and malonic acids, iron, phosphorus, potassium, calcium, magnesium, silicon, boron, chromium. It increases the haemoglobin level, manages blood sugar, reduces the risk of developing gallstone disease, prevents the formation of atherosclerotic plaques, removes toxic and radioactive substances and heavy metal salts from the body.
